Ingredients
  

For the Cupcakes

  • 1.5 cups 1 ½ cups all-purpose flour
  • 1 cup 1 cup granulated sugar
  • 0.5 cups ½ cup unsalted butter, softened
  • 2 large 2 large eggs
  • 0.5 cups ½ cup milk
  • 1 each Zest of 1 lemon Enhances flavor
  • 1 each Zest of 1 lime Enhances flavor
  • 1 each Zest of 1 orange Enhances flavor
  • 2 teaspoons 2 teaspoons baking powder
  • 0.25 teaspoons ¼ teaspoon salt
  • 1 each Juice of 1 lemon Freshly squeezed is best
  • 1 each Juice of 1 lime Freshly squeezed is best
  • 1 each Juice of 1 orange Freshly squeezed is best

For the Citrus Frosting

  • 1 cup 1 cup unsalted butter, softened
  • 4 cups 4 cups powdered sugar
  • 2-3 tablespoons 2-3 tablespoons heavy cream Adjust for desired consistency
  • 1 each Zest of 1 lemon
  • 1 each Zest of 1 lime
  • 1 each Zest of 1 orange
  • to taste A squeeze of juice from each citrus fruit

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter and granulated sugar until it’s light and fluffy.
  • Add in the eggs, one at a time, mixing well after each addition.
  • Stir in the lemon, lime, and orange zests.

Mixing

  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add this dry mixture to the butter-egg mixture, alternating with the milk.
  • Mix until just combined, then add all the citrus juice.

Baking

  • Line a muffin tin with cupcake liners and fill each cup about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick comes out clean.

Frosting Preparation

  • While the cupcakes are baking, beat the softened butter until creamy.
  • Gradually add the powdered sugar, drizzling in the heavy cream and mixing until smooth.
  • Mix in the citrus zests and juices to taste.

Serving

  • Once your cupcakes have cooled, frost each generously with the citrus frosting.
  • Optional: Top with extra zest or a candied citrus slice.

Notes

Don’t skip the zest! It really enhances the fruity flavor. Store leftovers in an airtight container for up to 3 days.
