Ingredients
  

For the Cheesecake Base

  • 1.5 cups 1 ½ cups graham cracker crumbs
  • 0.5 cups ½ cup unsalted butter, melted
  • 0.25 cups ¼ cup granulated sugar
  • 1 tsp 1 tsp vanilla extract

For the Cheesecake Filling

  • 2 packages 2 (8-ounce) packages cream cheese, softened
  • 1 cups 1 cup granulated sugar
  • 3 large 3 large eggs
  • 2 limes Juice and zest of 2 limes
  • 1 tsp 1 tsp vanilla extract

For the Lime Mousse Topping

  • 1 cups 1 cup heavy whipping cream
  • 0.25 cups ¼ cup powdered sugar
  • 1 lime Juice and zest of 1 lime
  • 1 envelope 1 envelope unflavored gelatin (optional, for a firmer mousse)

For the Lime Glaze

  • 0.5 cups ½ cup powdered sugar
  • 2-3 tbsp 2-3 tbsp lime juice
  • 1 lime Zest of 1 lime

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and vanilla extract. Press this mixture firmly into a 9-inch springform pan.
  • In a mixing bowl, beat the softened cream cheese and sugar until smooth and fluffy. Add in the eggs one at a time, mixing well after each addition. Finally, fold in the lime juice, zest, and vanilla extract.

Baking

  • Pour the cheesecake filling into your prepared crust and bake for about 40-45 minutes. It should be set but still slightly jiggly in the middle.
  • Let it cool completely at room temperature and then refrigerate for at least 4 hours (or overnight).

Mousse Preparation

  • Whip the heavy cream and powdered sugar until stiff peaks form. In a separate bowl, mix the lime juice and zest with the prepared gelatin (if using). Fold this mixture into the whipped cream.

Assembly

  • After chilling the cheesecake, spread the lime mousse over the top.
  • In a small bowl, whisk together the powdered sugar and lime juice until smooth. Drizzle this over the mousse.
  • Chill the assembled cheesecake for another hour before serving.

Notes

Make sure your cream cheese is at room temperature for easier mixing. Experiment with the amount of lime zest to suit your taste!
