Ingredients
  

Salad Ingredients

  • 2 medium apples, diced (Granny Smith or Honeycrisp recommended) Sprinkle with lemon juice to prevent browning.
  • 1 cup shredded carrots Pre-shredded can save time.
  • 1/2 cup dried cranberries Sweetness overload!
  • 1/4 cup walnuts, chopped Optional but adds extra crunch.

Dressing Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey Maple syrup can be used as a substitute.
  • Salt and pepper to taste

Preparation

  • Wash and dice the apples, sprinkling a tiny bit of lemon juice on them to prevent browning.

Mixing

  • In a large bowl, combine the diced apples, shredded carrots, and dried cranberries. If using walnuts, add them as well.

Dressing

  • In a small bowl, whisk together olive oil, apple cider vinegar, honey, and a pinch of salt and pepper to taste until well emulsified.

Serving

  • Drizzle the dressing over the salad mixture and toss everything together until well combined.

Notes

Feel free to customize the salad with ingredients you have on hand. It's best enjoyed fresh but leftovers can be stored in an airtight container in the fridge.
