Ingredients

Pasta Ingredients

  • 8 ounces pasta (your choice! Penne or spaghetti work great)

Vegetable Ingredients

  • 2 cups fresh spinach, chopped
  • 3 cloves garlic, minced

Cooking Ingredients

  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving

Instructions

Cooking the Pasta

  • Boil a large pot of salted water. Add your pasta and cook according to package instructions until al dente. Drain the pasta, reserving about 1 cup of pasta water.

Sautéing the Spinach and Garlic

  • In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Toss in the chopped spinach, and cook until wilted, which takes about 2-3 minutes.

Combining Ingredients

  • Add the drained pasta into the skillet with spinach and garlic. Mix well and add some reserved pasta water, a little at a time, until you achieve your desired sauce consistency. Season with salt and pepper.

Serving

  • Plate your pasta and top generously with grated Parmesan cheese. Voila! You have a quick and scrumptious dinner ready in less than 30 minutes.

Notes

Feel free to mix in other veggies like cherry tomatoes or mushrooms for extra flavor. For a creamy version, add a splash of heavy cream or a dollop of ricotta cheese during the mixing process. For a bit of heat, consider adding red pepper flakes.
