  • 1 cup pumpkin puree canned or fresh, your choice!
  • 1 cup granulated sugar
  • ½ cup unsalted butter softened
  • 1 large egg
  • cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • tsp pumpkin pie spice the secret ingredient
  • ½ tsp salt
  • 1 cup powdered sugar for decorating
  • 1 splash milk for the icing
  • 1 cup mini chocolate chips for ghost eyes

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add in the pumpkin puree and egg, mixing well to combine.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
  • Using a spoon or cookie scoop, drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, spacing them about two inches apart.

Baking

  • Bake for 10-12 minutes, or until the edges are lightly golden. Let them cool on the sheet for a few minutes before transferring them to a wire rack.

Decorating

  • Once your cookies are completely cool, mix the powdered sugar with a splash of milk until you reach a pourable consistency. Drizzle or dip the cooled cookies to create a ghostly white icing.
  • Use mini chocolate chips for cute ghost eyes.

Notes

Chill your dough for about 30 minutes before baking for better shape. Make decorating a family activity! Store cookies in an airtight container for about a week. These cookies can also be frozen for up to three months.
