  • 1 cup pumpkin puree (not pumpkin pie filling!) Use pure pumpkin puree for the best flavor.
  • 8 oz cream cheese, softened Ensure cream cheese is softened before mixing.
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice
  • 1 cup graham cracker crumbs

For the Coating

  • 1 cup white chocolate chips (or dark chocolate for a twist!) Use your preferred type of chocolate.
  • Optional toppings: crushed nuts, sprinkles, or more graham cracker crumbs

Preparation

  • In a large bowl, combine the pumpkin puree, softened cream cheese, powdered sugar, vanilla extract, and pumpkin spice.
  • Use a hand mixer or a sturdy whisk to blend everything until it’s smooth and creamy.
  • Gradually add in the graham cracker crumbs and mix thoroughly until well incorporated.
  • Cover the bowl with plastic wrap and pop it in the fridge for about 30 minutes.

Rolling and Coating

  • Once chilled, scoop out the mixture and roll it into bite-sized balls (about 1 inch in diameter).
  • In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring until smooth.
  • Dip each pumpkin truffle into the melted chocolate, ensuring it’s fully coated, then place them on a lined baking sheet.
  • Before the chocolate sets, sprinkle your desired toppings over each truffle.
  • Let the truffles chill in the fridge for about an hour, or until the chocolate hardens.

Notes

These truffles can be made up to a week in advance and stored in an airtight container in the fridge. They can also be frozen for up to three months.
