Ingredients
  

Dry Ingredients

  • 1 cup almond flour Can substitute with oat flour.
  • 1/2 cup oatmeal
  • 1 teaspoon baking powder
  • a pinch salt

Wet Ingredients

  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1/4 cup milk Dairy or non-dairy.
  • 1 teaspoon vanilla extract

Fruity Touch

  • 1/2 cup fresh raspberries Frozen raspberries can be used.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk the eggs and then stir in the applesauce, milk, and vanilla extract.
  • In another bowl, mix almond flour, oatmeal, baking powder, and salt.
  • Slowly pour the dry mixture into the wet ingredients, stirring until just combined.
  • Gently fold in the raspberries.

Baking

  • Scoop the batter into a greased or lined muffin tin.
  • Bake for about 20-25 minutes, or until a toothpick inserted in the middle comes out clean.

Cooling

  • Let the muffins cool for a few minutes before enjoying.

Notes

These muffins freeze beautifully, making them great for meal prep. Consider adding vanilla stevia for extra sweetness without sugar.
