Ingredients
  

For the Potato Noodles

  • 2 large potatoes The fluffier, the better!
  • 1 cup all-purpose flour Plus a bit extra for dusting
  • 1 whole egg Because everything's better with eggs!
  • Salt To taste
  • Pepper To taste

For the Potato Dumplings

  • 2 large potatoes Using a lot of potatoes!
  • 1 cup ricotta cheese Makes everything creamy
  • ½ cup grated Parmesan cheese Hello, umami!
  • 1 whole egg
  • 1 cup all-purpose flour You could say we’re flour friends
  • Salt To taste
  • Pepper To taste
  • Nutmeg A sprinkle (optional but recommended for a cozy vibe)

Instructions
 

Preparation

  • Peel the potatoes and cut them into chunks.
  • Boil them in a pot of salted water until fork-tender, about 15-20 minutes.
  • Drain and let them cool before mashing into a creamy delight.

Making Noodles

  • Mix the mashed potatoes with flour, the egg, salt, and pepper until the dough is soft but not sticky.
  • Roll the dough out on a floured surface and cut into strips.
  • Set the noodles aside for boiling.

Making Dumplings

  • In another bowl, combine the other potatoes with ricotta, Parmesan, egg, flour, salt, and pepper.
  • Form the mixture into small balls and drop them into a pot of boiling water.
  • Once they float to the top, they’re done!

Combine and Serve

  • In a skillet, combine the potato noodles and dumplings with a bit of butter or olive oil.
  • Add herbs or sautéed vegetables if desired.
  • Plate and sprinkle with fresh herbs or extra cheese before serving.

Notes

Adjust the flour amount based on the moisture of your potatoes. For picky eaters, consider cutting dumplings smaller or stuffing them with favorite cheese. Store leftovers in an airtight container in the fridge and reheat in a skillet with a splash of water.
