Seafood Ingredients

  • 1 lb firm white fish (like cod or halibut)
  • 1 lb shrimp, peeled and deveined
  • 1 lb mussels, cleaned Substitute with clams if needed

Base Ingredients

  • 1 can diced tomatoes (14 oz/400g)
  • 1 medium onion, diced
  • 4 cloves of garlic, minced
  • 1 piece bell pepper, diced (red or yellow) For a pop of color
  • 2 cups seafood or vegetable broth
  • 1 teaspoon paprika
  • 1/2 teaspoon red pepper flakes Adjust based on heat preference
  • to taste salt and pepper
  • 2 tablespoons olive oil

For Serving

  • Fresh herbs (like parsley or cilantro) for garnish
  • Crusty bread For dunking

Instructions
 

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté until they’re soft and translucent—about 4-5 minutes.
  • Toss in the minced garlic and cook for another minute.

Cooking

  • Pour in the can of diced tomatoes and stir in the paprika, red pepper flakes, salt, and pepper. Let that mixture bubble away for around 5 minutes.
  • Pour in the seafood or vegetable broth, bringing it back to a simmer. Allow it to cook for another 5 minutes.
  • Add the fish and let it cook for about 4-5 minutes.
  • Toss in the shrimp and mussels next. Cover the pot and cook for another 5 minutes, or until the shrimp are pink and the mussels have opened.
  • Ladle the stew into bowls and sprinkle with fresh herbs. Serve with crusty bread.

Notes

Don't fret if your sauce looks a little lumpy—it’s all part of the magic! For an extra kick, dollop some spicy aioli on top before serving.
