Main Ingredients

  • 4 pieces ripe pears (Bosc or Anjou) Leave the stems on for presentation.
  • 1 cup sugar
  • 4 cups water
  • 1 inch piece of fresh ginger, peeled and sliced Essential for flavor.
  • 1 teaspoon vanilla extract
  • 1 piece Juice of 1 lemon
  • 1/2 cup sliced almonds Toast before serving.
  • Mint leaves Optional, for garnishing.

Preparation

  • Peel the pears but leave the stems on for presentation.

Cooking

  • In a saucepot, combine sugar, water, sliced ginger, and lemon juice. Bring to a gentle simmer.
  • Gently place the peeled pears into the poaching liquid and simmer for 20-25 minutes, until tender but firm.
  • While the pears are poaching, toast the sliced almonds in a dry pan over medium heat for 3-5 minutes until golden, watching carefully to avoid burning.
  • Carefully remove the pears and place them on a serving dish. Drizzle with the poaching liquid and sprinkle the toasted almonds on top. Garnish with mint leaves if desired.

Notes

These pears can be made in advance and stored in the fridge. They taste even better the next day as the flavors meld together. Feel free to substitute almonds with walnuts or pecans.
