  • 1 pound fresh calamari, cleaned and sliced into rings Fresh calamari is preferred; if using frozen, ensure it's fully thawed and drained.
  • 1 cup white wine A versatile dry wine works best.
  • 1 cup seafood stock Chicken stock can be used as a substitute.
  • 4 cloves garlic, minced Garlic enhances the flavor of the broth.
  • 1 small onion, finely chopped Adds depth to the broth.
  • 2 tablespoons olive oil For sautéing.
  • 1 teaspoon red pepper flakes Optional, for a little heat.
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  • A crusty loaf of bread or some good crackers To soak up the broth.

Preparation

  • In a large skillet, heat the olive oil over medium heat. Add the garlic and onions, and sauté until fragrant and translucent, about 3-4 minutes.
  • Pour in the white wine and bring it to a simmer, allowing the alcohol to cook off for a couple of minutes.
  • Gently add the seafood stock to the skillet, and if you're using red pepper flakes, add them now.
  • Once bubbling, add the calamari rings. Stir gently and let them poach for about 2-3 minutes.
  • Season the broth with salt and pepper to taste.
  • Ladle the poached calamari and broth into bowls, garnish with fresh parsley, and serve with crusty bread.

Notes

Don’t be shy with the garlic; more enhances the flavor. Store leftovers in an airtight container in the fridge for up to two days.
