  • 1.5 cups all-purpose flour
  • 0.5 cups unsalted butter, softened
  • 1 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cups milk
  • 4-5 plums, pitted and sliced Use ripe but firm plums.
  • to taste powdered sugar for dusting Optional, for serving.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a medium bowl, combine the flour, baking powder, and salt. Whisk to blend.
  • In a larger bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition, then stir in the milk until smooth.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Gently fold in the plum slices.

Baking

  • Pour the batter into a greased and floured cake pan.
  • Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Cooling and Serving

  • Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack.
  • Dust with powdered sugar just before serving.

Notes

For the best flavor, use ripe but firm plums. A pinch of cinnamon or nutmeg can enhance the aroma. Store leftovers in an airtight container at room temperature for up to three days, or freeze tightly for up to three months.
