  • 0.5 teaspoon salt
  • 0.5 cups milk Can substitute with almond milk for a dairy-free version.
  • 4-5 pieces plums, pitted and sliced Use ripe but firm plums for best texture.
  • to taste powdered sugar for dusting Optional for serving.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a medium bowl, combine the flour, baking powder, and salt. Whisk to blend.
  • In a larger bowl, beat the softened butter and sugar until light and fluffy.
  • Add eggs one at a time, beating well after each. Stir in the milk until smooth.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. A few lumps are okay.
  • Gently fold in the plum slices.

Baking

  • Pour the batter into a greased and floured cake pan.
  • Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
  • Dust with powdered sugar before serving.

Notes

Use ripe but firm plums. A pinch of cinnamon or nutmeg can enhance the flavor. Store leftovers in an airtight container for up to three days.
