  • 1/4 cup sliced pepperoni Or use your favorite toppings.
  • 1/4 cup bell peppers For a pop of color and crunch.

  • optional Italian seasoning A sprinkle to take it to the next level.

Preparation

  • In a bowl, crack those eggs and whisk them until they resemble a beautiful golden mixture. Add a pinch of salt and pepper; season it like you mean it!
  • Grab a non-stick skillet and heat it over medium heat for about a minute.

Cooking

  • Pour in the egg mixture and let it sit for a minute to start setting up, then gently swirl the eggs to cook evenly.
  • When the edges of the eggs begin to set, sprinkle the mozzarella cheese, diced tomatoes, pepperoni slices, and bell peppers all over.
  • Cover the skillet with a lid for a minute or two, letting the cheese melt and flavors meld.

Serving

  • Once the cheese is ooey-gooey, slide the Pizza Eggs directly onto a plate. Garnish with fresh herbs if desired.

Notes
