Ingredients
  

Egg Mixture

  • 4 large large eggs free-range if preferred
  • 1/4 cup milk or your favorite non-dairy substitute
  • 1/2 cup marinara sauce store-bought works just fine
  • 1 teaspoon Italian seasoning adds flavor

Toppings

  • 1/2 cup shredded mozzarella cheese the ooey-gooey kind
  • 1/4 cup pepperoni slices or sausage, veggies, etc.
  • Fresh basil or parsley for garnish, optional

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together the eggs and milk until well combined.
  • Gently fold in the marinara sauce and Italian seasoning.
  • Stir in half the shredded mozzarella and pepperoni (or your preferred toppings).
  • Lightly grease an oven-safe dish and pour the egg mixture into it. Sprinkle the remaining cheese on top.

Cooking

  • Bake in the oven for about 20-25 minutes or until the eggs are set and the cheese is bubbly and golden.
  • Garnish with fresh basil or parsley before serving.

Notes

Feel free to mix and match your toppings. Leftover veggies? Toss ‘em in! Don’t worry if your sauce looks a little lumpy—it’s all part of the magic. To add some heat, sprinkle some red pepper flakes before serving. Leftovers can be stored in the fridge for up to three days.
