Ingredients
  

For the cheesecake filling

  • 16 oz cream cheese, softened Use full-fat cream cheese for the best texture
  • 1 cup granulated sugar
  • 1 cup heavy cream Make sure it's well chilled
  • ¼ cup sour cream
  • 1 teaspoon vanilla extract
  • ½ cup pistachio flour Or finely ground pistachios
  • ½ cup raspberry puree Fresh or frozen

For the domes

  • 1 cup crushed graham crackers
  • ½ cup unsalted butter, melted
  • 2 tablespoons sugar

For decoration

  • to taste edible gold leaf Optional but adds elegance
  • to taste chopped pistachios For garnish
  • to taste fresh raspberries For garnish

Instructions
 

Prepare the Crust

  • In a mixing bowl, combine crushed graham crackers, melted butter, and sugar. Mix until it resembles wet sand.
  • Press this mixture into silicone dome molds to form a crust. Place in the freezer while you prepare the cheesecake filling.

Make the Cheesecake Filling

  • In a large mixing bowl, beat the cream cheese and sugar until fluffy and smooth—about 3 minutes.
  • Add in the heavy cream, sour cream, and vanilla extract, beating until well-combined.
  • Finally, fold in the pistachio flour and raspberry puree.

Fill the Molds

  • Remove the crust from the freezer and carefully fill each dome mold with the cheesecake mixture.
  • Tap gently to remove air bubbles and smooth the top with a spatula if necessary.
  • Cover the molds with plastic wrap and freeze for at least 4 hours, or until completely set.

Unmold and Serve

  • Once frozen solid, carefully remove the domes from the silicone molds. If they don’t release easily, run them under warm water for a few seconds.

Add the Finishing Touches

  • Gently place a piece of edible gold leaf on top of each cheesecake dome.
  • Sprinkle with chopped pistachios and garnish with fresh raspberries.

Notes

Gold leaf is optional; your dessert will still look great without it. If raspberry puree is too thick, add a splash of water to loosen it up.
