  • 1 can (8 oz) crushed pineapple, drained
  • 1 cup unsweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 0.5 cup powdered sugar (for frosting)

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  • In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  • Add the softened butter and mix until the mixture is crumbly.
  • Next, add the eggs, crushed pineapple, shredded coconut, and vanilla extract. Mix until just combined—don’t overdo it!
  • Pour the batter into your prepared cake pan, smoothing the top with a spatula.

Baking

  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool for 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.

Frosting

  • Mix powdered sugar with a splash of pineapple juice for a simple frosting.

Notes

For a stronger flavor, consider toasting the shredded coconut before adding it to the batter. Make sure to drain the pineapple well to avoid a soggy cake. Serve with whipped cream or vanilla ice cream for an extra treat.
