Ingredients
  

For the Crust

  • 1 cup crushed graham crackers The crumblier, the better.
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons granulated sugar

For the Cheesecake Filling

  • 16 oz cream cheese, softened Should be soft to the point where it practically melts.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract Optional but recommended.
  • 1 cup crushed pineapple, drained Ensure it’s well-drained.
  • 1 cup whipped cream Store-bought or homemade.

Topping

  • Additional crushed pineapple and whipped cream for garnish Optional.

Instructions
 

Make the Crust

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the crushed graham crackers, melted butter, and sugar. Mix until it resembles wet sand.
  • Press this mixture firmly into the bottom of an 8-inch square dish.

Combine the Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Gradually add the powdered sugar and vanilla extract, mixing until fully combined.
  • Gently fold in the crushed pineapple and whipped cream, being careful to keep the whipped cream fluffy.

Assemble and Chill

  • Spread the cheesecake filling over your crust, smoothing it out with a spatula.
  • Cover and refrigerate for at least 4 hours, or overnight.

Serve and Enjoy

  • Once chilled, cut into squares and serve with additional crushed pineapple and whipped cream on top.

Notes

Make it ahead for stress-free entertaining. For variations, try other fruits like strawberries or raspberries. Store leftovers covered in the fridge for up to 3 days. Can be frozen for later enjoyment.
