  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup crushed pineapple, drained Be sure to drain the pineapple well.
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Optional Ingredients

  • 1/2 cup chopped nuts For added crunch.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the flour, sugar, baking soda, and salt. Whisk together until well blended. Add chopped nuts if using.
  • In another bowl, blend the drained crushed pineapple, vegetable oil, eggs, and vanilla extract until smooth.
  • Gradually fold the wet ingredients into the dry mixture, stirring gently until no flour is visible. Do not overmix.
  • Grease a 9×5-inch loaf pan and pour the batter in, shaking slightly to settle it evenly.

Baking

  • Place the pan in the preheated oven and bake for 50-60 minutes, until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For best results, ensure the pineapple is well drained to avoid a soggy loaf. Consider adding spices like cinnamon or nutmeg for extra flavor. Store any leftovers in an airtight container at room temperature for up to three days, or freeze for up to three months.
