  • 4 pieces ripe pears (Bartlett or Anjou) Leave skin on for added texture, or peel if desired.
  • 5 cups mixed salad greens (arugula, spinach, romaine)
  • 1 cup crumbled feta cheese (or goat cheese) Use goat cheese for a fancier option.
  • ½ cup walnuts or pecans, toasted Can replace with almonds if preferred.
  • ¼ cup dried cranberries or pomegranate seeds Adds a pop of color.

Dressing

  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey (or maple syrup) Use maple syrup for a sweeter flavor.

Preparation

  • Wash and rinse the salad greens under cool water and dry them using a salad spinner or towel. Set aside in a large bowl.
  • Slice the pears thinly, leaving the skin on for color and crunch, or peeling if preferred.
  • Toast the walnuts or pecans in a small dry pan over medium heat for about 5 minutes until golden and fragrant.
  • In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper to create the dressing.

Assembly

  • In the large mixing bowl, combine the salad greens, sliced pears, toasted nuts, crumbled cheese, and cranberries.
  • Drizzle the dressing over the salad mix generously and toss until everything is well-coated.
  • Serve immediately, showcasing the visually stunning salad.

Notes

Feel free to swap out nuts or cheese according to your preferences. Prepare the dressing in advance and shake it before serving. Pairs well with grilled chicken or soup for a complete meal.
