Wet Ingredients

  • 1 cup creamy peanut butter Chunky peanut butter could alter texture.
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • a pinch salt To keep things balanced.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the creamy peanut butter, white sugar, brown sugar, and softened butter. Beat until fluffy and light.
  • Add the egg and vanilla extract, mixing well.
  • In a separate bowl, mix the flour, baking soda, baking powder, and salt. Gradually add this to the wet mixture, mixing gently.
  • Scoop tablespoon-sized portions of dough, roll them into balls, and place them on a parchment-lined baking sheet.
  • Gently flatten each ball with a fork to create crisscross patterns.
  • Bake for 10-12 minutes until edges look set.
  • Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For easier measuring, coat your cup with cooking spray before measuring peanut butter. Chill dough for 30 minutes for thicker cookies. Optionally, mix in chocolate chips or chopped Reese’s Peanut Butter Cups for extra indulgence.
