For the Brownie Base

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt

For the Peanut Butter Cheesecake Layer

  • 8 oz cream cheese, softened
  • 1/2 cup peanut butter the creamy kind, not the crunchy
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish or line it with parchment paper.
  • In a mixing bowl, combine the melted butter and sugar, stirring until well blended.
  • Add in the eggs and whisk, then stir in the vanilla.
  • Slowly sift in the cocoa powder, flour, and salt and mix just until combined.
  • Pour the brownie batter into the prepared dish, spreading it evenly.

Cheesecake Layer

  • In another bowl, blend the cream cheese with the peanut butter until smooth.
  • Add in the powdered sugar, egg, and vanilla, mixing until fully incorporated.
  • Pour the peanut butter cheesecake mixture over the brownie batter and swirl lightly if desired.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until a toothpick comes out clean.
  • Allow the brownies to cool completely before slicing them into squares.

Notes

For extra flavor, consider adding chocolate chips to the brownie mix. Store leftovers in an airtight container in the refrigerator for up to a week.
