Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar plus additional for topping (optional)

Wet Ingredients

  • 1/2 cup cold butter, cut into small pieces Use cold butter for flaky layers.
  • 1 cup milk
  • 2 cups fresh peaches, sliced Can substitute with canned peaches, drained.
  • 1 tablespoon lemon juice

Preparation

  • Preheat your oven to 425°F (220°C). In a bowl, combine the sliced peaches with lemon juice and a tablespoon of sugar, if desired. Set aside.
  • In a large mixing bowl, whisk together the flour, baking powder, salt, and 1/4 cup sugar.
  • Add the cold butter pieces into the flour mixture. Use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.
  • Pour in the milk gradually, stirring gently until just combined. The dough will be sticky.
  • On a floured surface, turn out the dough and gently knead it a couple of times. Pat it down until it’s about 1-inch thick.
  • Using a biscuit cutter or a glass, cut out the biscuits and place them on a baking sheet lined with parchment paper.
  • Press some of the peach mixture into the top of each biscuit, allowing juice to seep in. Sprinkle extra sugar on top.

Baking

  • Bake for about 15-20 minutes, or until the biscuits are golden brown and fragrant.

Notes

Use cold butter for best results. Frozen peaches can be used if short on time. A gentle kneading is key to avoid tough biscuits. Serve warm with whipped cream or vanilla ice cream.
