Ingredients
  

For the Patty Melt

  • 1 lb ground beef
  • 1 small onion, thinly sliced
  • 4 slices rye or Texas toast bread
  • 4 slices Swiss cheese or your favorite cheese!
  • Butter for grilling
  • Salt and pepper to taste

For the Secret Sauce

  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tbsp pickle relish
  • A sprinkle of smoked paprika for that extra zing!

Preparation

  • In a mixing bowl, stir together the mayonnaise, ketchup, Dijon mustard, pickle relish, and smoked paprika to prepare the secret sauce. Set aside.
  • Melt a bit of butter in a skillet over medium heat and sauté the sliced onions until caramelized, about 5-7 minutes.

Cooking

  • Form the ground beef into two equally-sized patties, seasoning both sides generously with salt and pepper.
  • Push the caramelized onions to the side and add the beef patties to the skillet. Cook for 3-4 minutes on each side for medium-rare or longer if preferred.
  • On one slice of bread, spread a generous amount of the secret sauce, layer on a cheesy patty and caramelized onions, and top with another slice of bread.
  • Melt butter in the skillet on medium-low heat. Grill the sandwiches until the bread is golden brown and crispy, flipping halfway through and adding cheese to the top while grilling.
  • Slice the patty melts in half and serve hot with extra secret sauce on the side.

Notes

Don't skimp on the sauce; feel free to double it. A cast-iron skillet gives a perfect crisp. Decorate your plate with fresh herbs or serve with a pickle for added style.
