  • 8 oz pasta (fettuccine, spaghetti, or your favorite)
  • 3 cups vegetable broth (or chicken broth for added flavor)
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

  • In a large pot or Dutch oven, add olive oil and let it warm over medium heat.
  • Add minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the vegetable broth (or chicken broth) and bring to a gentle boil. Add in the pasta and stir.
  • Once the pasta is al dente (about 8-10 minutes), reduce the heat to low and add the heavy cream, stirring continuously.
  • Sprinkle in the grated Parmesan cheese and stir until melted and creamy. Season with salt and pepper.
  • Serve hot, garnished with fresh parsley.

Notes

For added flavor, feel free to use more garlic, or add red pepper flakes for some heat. If your sauce is too thick, add a splash of pasta water to loosen it up.
