Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the chopped onion and cook until it’s translucent.
  • Toss in the minced garlic and sliced carrots, cooking for another 3-4 minutes.

Cooking

  • Pour in the chicken broth and Italian seasoning, bringing it to a gentle boil.
  • Add the shredded chicken and gnocchi to the pot. Let it cook for about 5 minutes, or until the gnocchi float to the surface.
  • Reduce the heat to low and stir in the heavy cream and baby spinach. Allow the soup to simmer for a few more minutes, just until the spinach wilts.
  • Season with salt and pepper as desired.
