  • 1 cup uncooked white rice Medium or short grain works best.
  • 2 cups milk Whole milk enhances creaminess.
  • 1/2 cup sugar Adjust based on your sweet tooth.
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract Or a cinnamon stick for spice.
  • 1/4 teaspoon ground cinnamon For dusting on top.
  • 1 large egg To enrich the pudding.

Preparation

  • Cook the rice using your preferred method until tender.
  • In a medium saucepan, combine the cooked rice, milk, sugar, and salt over medium heat. Bring to a gentle simmer, stirring occasionally.
  • Reduce the heat and stir in the vanilla extract and ground cinnamon.
  • Let the pudding simmer for 20-25 minutes, stirring frequently until it thickens to your desired consistency.
  • In a small bowl, whisk the egg. Temper the egg by mixing a ladleful of hot pudding mixture into it, then stir it back into the pudding.
  • Cook for an additional 2-3 minutes.
  • Remove from heat and pour into serving dishes. Garnish with a sprinkle of cinnamon and let cool slightly before serving.

Notes

Leftover rice can be used to reduce cooking time. For variations, add almond extract or raisins, and serve with whipped cream or berries.
