Ingredients
  

For the filling

  • 4 cups fresh peaches, sliced You can use canned, but fresh is best!
  • 1/2 cup sugar Part of the 1 cup sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon lemon juice For that zing

For the batter

  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar Remaining sugar for batter
  • 1 cup whole milk
  • 1/2 cup butter, melted Because butter makes everything better

For serving

  • Vanilla ice cream Optional, but highly recommended

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a bowl, combine sliced peaches, 1/2 cup of sugar, cinnamon, and lemon juice. Let them marinate.
  • In another bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup of sugar.
  • Pour milk and melted butter into the dry mixture and stir until just combined, avoiding overmixing.

Assembly and Baking

  • Pour the peach mixture into a greased baking dish, then gently pour the batter over the peaches.
  • Bake for 40-45 minutes until the top is golden and the peach juices are bubbling.

Serving

  • Let the cobbler cool for a few minutes, then serve warm with a scoop of vanilla ice cream.

Notes

You can use frozen peaches, just make sure to thaw and drain them. Mix in fresh blueberries or blackberries for extra flavor!
