  • 2 teaspoons salt
  • 1/2 teaspoon instant yeast
  • 1 1/2 cups warm water Temperature should be comfortable to touch.

Preparation

  • In a large bowl, combine the flour, salt, and instant yeast.
  • Pour in the warm water and mix until a shaggy dough forms.
  • Cover the bowl with plastic wrap or a clean kitchen towel and let it sit at room temperature for at least 12 hours.

Shaping the Dough

  • Sprinkle some flour on a clean surface and gently transfer the dough.
  • With floured hands, lightly fold the dough a few times to bring it together.

Baking

  • Preheat the oven to 450°F with a Dutch oven inside for 30 minutes.
  • Let the dough rise again covered with a towel for another 30 minutes.
  • Carefully lower the dough into the hot Dutch oven, cover with the lid, and bake for 30 minutes.
  • Remove the lid and bake for an additional 15-20 minutes until the crust is golden brown.

Cooling

  • Remove the bread from the pot and let it cool on a wire rack.
  • Allow the bread to cool completely to avoid a soggy middle.

Notes

Longer fermentation improves flavor and texture. Feel free to add herbs, olives, or cheese to the dough for extra flavor.
