No-Bake Strawberry Swirl Cheesecake

Ingredients
  

Crust

  • 1.5 cups 1 and 1/2 cups graham cracker crumbs
  • 0.5 cups 1/2 cup unsalted butter, melted

Cheesecake Filling

  • 2 cups 2 cups cream cheese, softened
  • 1 cups 1 cup powdered sugar
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 cups 1 cup heavy whipping cream

Strawberry Swirl

  • 1.5 cups 1 and 1/2 cups fresh strawberries, pureed Use ripe, fresh strawberries for the best flavor.
  • 0.25 cups 1/4 cup granulated sugar (for the strawberries)

Preparation

  • Combine the graham cracker crumbs and melted butter in a bowl. Mix until fully integrated. Press this mixture into the bottom of a 9-inch springform pan to create the crust.
  • In a large mixing bowl, beat the softened cream cheese until creamy. Gradually add the powdered sugar and vanilla extract, beating well until smooth.
  • In another bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  • Pour half of the cheesecake filling into the crust. Pour half of the pureed strawberries over the filling. Gently swirl the strawberry puree into the cheesecake mixture and repeat with the remaining filling and strawberries.

Chilling and Serving

  • Cover the cheesecake and refrigerate for at least 4 hours or overnight until set.
  • Release the cheesecake from the springform pan, slice, and enjoy!

Notes

For best results, use fresh strawberries. Ensure to chill the cheesecake adequately for it to set properly. Experiment with variations by adding crushed cookies or nuts to the crust.
