  • 1.5 cups graham cracker crumbs
  • 0.5 cup unsalted butter, melted

Filling

  • 1 cup powdered sugar
  • 1 package (8 oz) cream cheese, softened
  • 2 cups heavy whipping cream
  • 1 can (20 oz) crushed pineapple, drained Ensure no excess juice
  • 1 teaspoon vanilla extract

Instructions
 

Preparation of Crust

  • In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix well until everything resembles wet sand.
  • Press the mixture into the bottom of a 9-inch springform pan to create a sturdy crust. Chill in the fridge.

Creamy Filling

  • Using an electric mixer, beat the softened cream cheese and powdered sugar together until smooth and fluffy.
  • In a separate bowl, whip the heavy cream until soft peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until well combined.
  • Fold in the drained crushed pineapple gently.

Assembly

  • Spread the filling over the prepared crust, smoothing it out evenly.
  • Cover with plastic wrap and let chill in the fridge for at least 4 hours or overnight.

Serving

  • Once set, run a knife around the edge of the springform pan to release the dessert. Slice and serve.

Notes

Chill time is essential for the flavors to meld. For variety, consider adding toasted coconut on top or a drizzle of chocolate.
