Ingredients
  

For the crust

  • ½ cup graham cracker crumbs
  • ¼ cup melted butter

For the filling

  • 1 can (14 oz) sweetened condensed milk
  • ½ cup sour cream
  • ½ cup freshly squeezed lime juice You will need about 4-5 limes
  • 1 teaspoon lime zest
  • a pinch of salt
  • Whipped cream for topping, optional

Instructions
 

Preparation

  • In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are fully coated.
  • Press the mixture into the bottoms of mini muffin cups (use liners or grease well) to form your crusts, packing it in well.

Making the filling

  • In a separate bowl, whisk together the sweetened condensed milk, sour cream, freshly squeezed lime juice, lime zest, and a pinch of salt until smooth.

Filling and chilling

  • Pour the lime filling into your prepared crusts, filling each one about ¾ of the way full.
  • Refrigerate for at least 2 hours to allow them to set.

Serving

  • When ready to serve, add a dollop of whipped cream on top and garnish with a sprinkle of lime zest or a fresh slice of lime.

Notes

Fresh lime juice is crucial for the best flavor. Consider adding a tablespoon of powdered sugar for extra sweetness if desired. Alternative serving vessels like small tart pans can also be used.
