Salad Ingredients

  • 4 cups mixed salad greens (like arugula, spinach, and romaine)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta or goat cheese (optional) Cheese makes everything better!
  • 1/4 cup nuts (like walnuts or almonds) For some satisfying crunch.

Balsamic Dressing

  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey A little sweetness goes a long way!

Instructions
 

Preparation

  • Rinse the mixed greens thoroughly under cold water. Pat them dry and place them in a large salad bowl.
  • Toss in the cherry tomatoes, cucumber, and red onion. If using cheese and nuts, sprinkle those in as well.
  • In a small bowl or jar, combine balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper. Whisk or shake until combined.
  • Drizzle the dressing over the salad. Toss gently until all the greens and veggies are coated.
  • Serve immediately and enjoy the vibrant flavors!

Notes

Meal prep ahead by storing dressing separately until serving. Add roasted beets, avocado, or grilled chicken for a heartier meal.
