  • 1 cup finely ground coffee beans The fresher, the better!
  • 1 cup oats Old-fashioned or quick oats work
  • ½ cup honey Or maple syrup for a vegan alternative
  • ½ cup dark chocolate chips Because we all need a little chocolate!
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 pinch salt To bring out all the flavors!

Preparation

  • In a large mixing bowl, combine your ground coffee beans, oats, honey, cocoa powder, vanilla extract, and salt. Stir well until everything is thoroughly combined.
  • Gently fold in the dark chocolate chips.
  • Scoop about a tablespoon of the mixture and roll it into a small ball. Repeat until you’ve used up all the mixture.
  • Place the rolled bites on a parchment-lined baking sheet and pop them in the fridge for at least 30 minutes.

Serving

  • Once chilled, your Mini Mocha Coffee-Bean Bites are ready to devour! Store them in an airtight container in the fridge for up to a week.

Store these bites in an airtight container in the fridge. They should stay fresh for about a week. You can freeze them in a single layer on a parchment-lined tray, then transfer to a bag or container for up to 3 months.
