Main Ingredients

  • 1 pound ground beef or turkey Use ground beef or turkey based on preference.
  • 1 cup cooked rice Substitute with quinoa if desired.
  • 1 can black beans, drained and rinsed Adds fiber to the dish.
  • 1 cup corn Can use frozen or fresh corn.
  • 1 large bell pepper, chopped Choose any color: green, red, or yellow.
  • 1 cup shredded cheese Cheddar or Monterey Jack recommended.
  • 2 teaspoons taco seasoning Adjust to taste.
  • Salt and pepper to taste
  • Chopped cilantro for garnish Optional, for presentation.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground beef (or turkey) until browned, breaking it apart as it cooks.
  • Add the chopped bell pepper to the skillet and sauté for about 3-4 minutes until softened.
  • Stir in the taco seasoning, cooked rice, black beans, corn, salt, and pepper.
  • Continue to stir for about 5 minutes to combine all the flavors.
  • Pour the mixture into a greased baking dish (about 9x13 inches) and top with shredded cheese.
  • Bake for about 20 minutes, or until the cheese is bubbly and golden.
  • Once out of the oven, garnish with chopped cilantro and serve warm.

Notes

You can use leftover pasta or cauliflower rice for a low-carb version. Feel free to add any other vegetables you have on hand. Lumpy cheese sauce is part of the charm!
