  • 1 cup sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 1 tsp ground cinnamon

  • 0.5 cups unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, mix together the flour, sugar, baking powder, salt, and cinnamon.
  • In another bowl, whisk together the melted butter, eggs, milk, and vanilla extract until fully combined.
  • Pour the wet ingredients into the dry mixture and stir gently until just combined; a few lumps are fine.
  • Gently fold in the diced apples until evenly distributed.
  • Spoon the batter into the prepared muffin cups, filling each about two-thirds full.

Baking

  • Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  • Let them cool for a few minutes before transferring to a wire rack.

Serving

  • These muffins are best enjoyed warm, optionally with a little butter.

Notes

For a crunchier top, sprinkle some extra cinnamon sugar on top before baking. Don't worry if your muffins sink a little after baking; it adds to their rustic charm. Store leftovers at room temperature in an airtight container for up to three days, or freeze individually for longer storage.
