  • 1 9-inch 9-inch pie crust store-bought or homemade
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, chopped leafy greens are good for the soul!
  • 4 large eggs
  • 1 cup milk or cream, if you’re feeling fancy
  • 1 cup feta cheese, crumbled adds salty goodness
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg adds a delightful kick

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent—about 5 minutes.
  • Add the minced garlic and chopped spinach. Cook until the spinach wilts down, about 2-3 minutes. Season with salt and pepper.
  • In a large bowl, whisk together the eggs and milk. Add the crumbled feta cheese, nutmeg, and sautéed spinach mixture to the bowl, and stir to combine.
  • Pour the egg mixture into the pie crust.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until the quiche is set in the center and lightly browned on top.
  • Allow the quiche to sit for about 10 minutes before slicing.

Notes

Store-bought pie crust should be of good quality. You can substitute spinach with other greens like kale or broccoli. This quiche can be made ahead of time and frozen.
