  • 2 cups fresh spinach (chopped) Use fresh spinach for best flavor.
  • 1 cup feta cheese (crumbled) You can substitute with goat cheese if desired.
  • 1/2 cup all-purpose flour Can be substituted with gluten-free flour.
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp dried oregano Essential for Mediterranean flavor.
  • to taste Salt and pepper Adjust based on your preference.
  • as needed Cooking spray or olive oil for greasing

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, whisk together the eggs.
  • Gradually stir in the chopped spinach, crumbled feta, flour, Parmesan, garlic powder, onion powder, oregano, salt, and pepper until well combined.
  • Line a baking sheet with parchment paper.
  • Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared sheet and flatten each mound slightly.
  • Spray the tops with cooking spray or drizzle with olive oil.
  • Bake for about 15-20 minutes or until the edges are golden brown and crispy.
  • Let them cool for a few minutes before serving.

Notes

Feel free to add your favorite herbs or sun-dried tomatoes. To keep crisps from becoming mushy, adjust flour if the mixture is too wet. These crisps can be frozen for later, just reheat in the oven for crunch.
