Ingredients
  

Main Ingredients

  • 1 cup fresh spinach, chopped Use fresh, not frozen, for the best texture.
  • 1 cup feta cheese, crumbled Packaged crumbled feta works well.
  • 1/2 cup all-purpose flour Gluten-free option can be substituted.
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Greek yogurt Can substitute with sour cream or dairy-free yogurt.
  • 2 tablespoons olive oil
  • 1 clove garlic, minced Optional for flavor.
  • to taste Salt and pepper Adjust based on preference.
  • to taste Red pepper flakes (optional) For a spicy kick.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a medium bowl, combine the chopped spinach, feta cheese, all-purpose flour, grated Parmesan cheese, Greek yogurt, olive oil, and minced garlic. Season with salt and pepper and red pepper flakes if desired.

Shaping and Baking

  • Take a spoonful of the mixture and roll it into a small ball, about the size of a meatball. Place on the prepared baking sheet, leaving some space in between each.
  • Bake in the oven for 20-25 minutes or until golden brown and crispy.

Serving

  • Allow to cool slightly before serving. Enjoy on their own or with a dipping sauce like tzatziki.

Notes

You can prepare the mixture ahead of time and refrigerate. Leftovers can be frozen and baked directly from the freezer.
