  • 1 block feta cheese Choose a good quality block for better flavor.
  • 4 large eggs Farm fresh eggs are recommended.
  • 2 ripe tomatoes, diced Use fresh, ripe tomatoes for the best taste.
  • 1 small bell pepper, chopped Any color bell pepper works.
  • 2 tablespoons olive oil Extra virgin olive oil is preferred.
  • 1 teaspoon dried oregano Feel free to add more for extra flavor.
  • to taste Salt and pepper Adjust according to your dietary needs.
  • as needed Fresh herbs for garnish Parsley or basil can be used.

Instructions
 

Preparation

  • Preheat your oven to 400°F (205°C).
  • In a baking dish, place the block of feta in the center. Surround it with the diced tomatoes and bell pepper.
  • Drizzle the olive oil over the vegetables, and sprinkle the oregano, salt, and pepper.

Baking

  • Bake for about 25-30 minutes until the feta softens and the veggies are tender.
  • Carefully crack the eggs over the top and return to the oven for an additional 5-7 minutes, or until the eggs are to your desired doneness.

Serving

  • Remove from the oven and sprinkle fresh herbs over the top. Serve with a drizzle of olive oil if desired.

Notes

For a spicier kick, add diced jalapeños or red pepper flakes. You can also include olives or artichokes for more Mediterranean flair. Store leftovers in an airtight container in the fridge for up to 2 days and reheat before serving.
