  • 1/2 teaspoon red pepper flakes (optional) adjust to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 pound gnocchi
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

  • In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  • Stir in the minced garlic and chopped sundried tomatoes, cooking for another 1-2 minutes until fragrant.
  • Pour in the chicken broth and heavy cream. Sprinkle in the Italian seasoning and red pepper flakes, if using. Stir until well combined and allow it to simmer for about 5 minutes.
  • Toss in fresh spinach and gnocchi, allowing the spinach to wilt and the gnocchi to cook according to package instructions, usually about 3-5 minutes.
  • Stir in the grated Parmesan cheese, letting it melt into the sauce. Adjust seasoning to taste, and your dish is ready to go!

Notes

Feel free to swap the spinach for your favorite greens or add in other vegetables like bell peppers or mushrooms. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Just reheat gently on the stove, adding a splash of broth if needed.
