Ingredients
  

For the crust

  • 1.5 cups crushed graham crackers
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the filling

  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup fresh lime juice
  • Zest of two limes
  • 1 cup ripe mango puree

For serving

  • Whipped cream for serving

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a bowl, combine the crushed graham crackers, sugar, and melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes and allow to cool.
  • In another bowl, beat together the softened cream cheese and sugar until smooth. Add in the eggs one at a time, mixing well after each addition. Stir in the lime juice, lime zest, and mango puree until fully blended.

Baking

  • Pour the cheesecake filling over the cooled crust and smooth the top.
  • Bake it in the oven for about 45 minutes or until the center is set but still slightly wobbly.

Cooling

  • Turn off the oven and let the cheesecake cool inside for about an hour. Refrigerate for at least 4 hours, preferably overnight, to set completely.

Serving

  • When ready to serve, add whipped cream on top for extra indulgence.

Notes

Don't skip the chilling time; the cheesecake is best served cold. Garnish with fresh mango slices for color. Lime zest adds flavor—don't skip it!
