  • 1 pound ground chicken You can substitute with ground turkey, beef, or plant-based meat.
  • 1 can black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 1 cup salsa
  • 4 pieces eggs Will help bind the casserole.
  • 1 cup shredded cheese (cheddar or your favorite blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper

Preparation

  • Preheat your oven to 375°F (190°C) to ensure the casserole cooks evenly.
  • In a skillet over medium heat, brown the ground chicken until thoroughly cooked, about 5-7 minutes.
  • In a large bowl, combine the cooked chicken, black beans, corn, salsa, eggs, cumin, chili powder, salt, and pepper. Stir until everything is well mixed.
  • Pour the mixture into a greased 9x13 inch baking dish. Bake for approximately 30 minutes, or until the center is set and a little golden on top.
  • Sprinkle the shredded cheese on top and return to the oven for an additional 5-10 minutes until the cheese melts and bubbles.

Serving

  • Slice it up and serve warm, topped with your favorites like sour cream, avocado, or fresh cilantro for an added kick.

Notes

For a one-pan meal, you may bake in a cast-iron skillet for a rustic look. The casserole can be stored in an airtight container in the fridge for up to 3-4 days and can be frozen for later use.
