  • 1 pound ground beef
  • 6 slices bacon, chopped Cook until crispy
  • 1 medium onion, diced
  • 2 cups cauliflower florets
  • 1 cup shredded cheddar cheese Divided into half for mixing and topping
  • 4 large eggs
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional: chopped pickles or mustard for topping

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the chopped bacon until crispy. Remove and drain on a paper towel, leaving a little grease in the pan.
  • In the same skillet, add the diced onion and sauté until translucent. Add the ground beef, seasoning with salt and pepper, and cook until browned.
  • In a large bowl, combine the cooked meat and onions with the bacon, cauliflower, and half of the cheese. In another bowl, whisk together eggs and heavy cream, then pour this mixture over the meat and veggies. Stir until well coated.
  • Pour the mixture into a greased baking dish and sprinkle the remaining cheese on top.
  • Bake in the preheated oven for about 35-40 minutes, or until set and the cheese is bubbling.
  • Let it cool slightly before serving. Optional: add pickles or mustard for garnish.

Notes

Customize your casserole by adding ingredients like bell peppers or jalapeños for extra flavor. This dish keeps well in the fridge for up to 3 days for meal prep.
