Ingredients
  

Main Ingredients

  • 1 pound flank or sirloin steak, thinly sliced
  • 4 large flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 1 medium bell pepper, sliced
  • 1 medium onion, thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • salt and pepper to taste
  • 2 tablespoons olive oil (for cooking)

Optional Toppings

  • sour cream
  • salsa
  • guacamole

Instructions
 

Preparation

  • In a bowl, mix your steak with garlic powder, chili powder, salt, and pepper. Let those flavors mingle for a bit.

Sauté the Veggies

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Toss in your sliced bell pepper and onion, cooking them until tender and slightly caramelized (around 5 minutes). Remove them from the skillet and set aside.

Cook the Steak

  • In the same skillet, add the remaining tablespoon of olive oil and the seasoned steak. Cook until browned and just cooked through, roughly 3-4 minutes.

Assemble the Quesadillas

  • Lay a tortilla in the skillet, sprinkle with cheese, then add sautéed veggies and cooked steak. Top with more cheese and another tortilla.

Cook Until Golden

  • Cook for about 3-4 minutes on each side, or until tortillas are golden brown and cheese is melted.

Slice and Serve

  • Remove from the skillet, slice into wedges, and serve warm with your favorite toppings.

Notes

Feel free to mix up the ingredients! Add black beans, corn, or even mushrooms. For cheese, cheddar or pepper jack also work nicely. For added heat, include jalapeños.
