  • 4 medium medium russet potatoes, scrubbed clean
  • 1 pound ground beef or turkey (your choice!)
  • 1 packet taco seasoning so you can save time for Netflix!
  • 1 cup shredded cheese (cheddar or your favorite blend)
  • ½ cup sour cream optional, but recommended
  • 1 cup salsa because what’s a taco without salsa?
Garnish
  • Chopped green onions and fresh cilantro optional for garnish

Method
 

Baking the Potatoes
  1. Preheat your oven to 400°F (200°C). Poke a few holes in the potatoes with a fork. Bake for about 45-60 minutes until fork-tender.
Cooking the Meat
  1. While the potatoes are baking, heat a skillet over medium heat. Add the ground beef, breaking it apart as it cooks. Once browned, drain excess fat if necessary. Stir in the taco seasoning and let it simmer according to package instructions.
Loading the Potatoes
  1. Remove the baked potatoes from the oven and let them cool for a few minutes. Cut them open and fluff the insides with a fork. Spoon the taco meat generously into each potato, then sprinkle with shredded cheese.
Melting the Cheese
  1. Return your loaded potatoes to the oven for a few more minutes to melt the cheese.
Garnishing and Serving
  1. Top with sour cream, salsa, green onions, and cilantro before serving.

Notes

Make it vegetarian by swapping the meat for black beans or lentils. Add jalapeños or use spicy taco seasoning for more heat. Don't stress if your cheese doesn't melt perfectly; a bit of contrast adds character.
