Baking the Potatoes

Loading the Potatoes
- Remove the baked potatoes from the oven and let them cool for a few minutes. Cut them open and fluff the insides with a fork. Spoon the taco meat generously into each potato, then sprinkle with shredded cheese.
Melting the Cheese
- Return your loaded potatoes to the oven for a few more minutes to melt the cheese.
Garnishing and Serving
- Top with sour cream, salsa, green onions, and cilantro before serving.
Notes
Make it vegetarian by swapping the meat for black beans or lentils. Add jalapeños or use spicy taco seasoning for more heat. Don't stress if your cheese doesn't melt perfectly; a bit of contrast adds character.
