  • 1 bunch curly kale Scrubbed and torn into bite-sized pieces
  • 1/4 cup freshly grated parmesan cheese
  • 1 unit lemon Juiced and zested
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic Minced
  • to taste pinch salt and pepper
  • 1 handful optional toasted pine nuts or walnuts For crunch

Instructions
 

Preparation

  • Rinse your kale thoroughly, removing any stubborn dirt.
  • Tear it into bite-sized pieces and place it in a large bowl.

Dressing

  • In a separate bowl, combine lemon juice, lemon zest, minced garlic, and olive oil. Whisk until smooth.

Mixing

  • Pour the dressing over the kale and sprinkle in the salt and pepper.
  • Massage the dressing into the kale pieces with your hands.

Finishing Touches

  • Add the grated parmesan and give it a final toss.
  • Optionally, add toasted nuts for crunch.

Serving

  • Serve immediately or let it marinate in the fridge for about 20 minutes before serving.

Notes

Feeling adventurous? Switch up the cheese to feta or goat cheese for different flavors. Store leftovers in an airtight container in the fridge for up to three days, but keep the cheese separate to avoid sogginess.
