Instructions

Preparation

  • If you’re making homemade mashed potatoes, peel and boil the potatoes until fork-tender. Drain and mash with butter, milk, salt, and pepper to taste. If you're using instant, just follow the package instructions.

Cooking the Chicken

  • Grill or fry your chicken until golden and cooked through.

Heating the Gravy

  • Heat your gravy in a saucepan over medium heat until it’s nice and warm.

Assembly

  • Spoon a generous portion of mashed potatoes into a bowl. Top with chicken, corn, and a ladle of gravy. Add a sprinkle of cheese and any other toppings you desire, like green onions or crispy bacon.

Serving

  • Serve immediately and watch as your family digs in with smiles on their faces!

Notes

Don’t stress if your gravy looks a little lumpy; that’s just extra flavor waiting to happen! Feel free to switch it up with different meats or go vegetarian by using mushrooms or tofu. This recipe is a great way to use leftover mashed potatoes.
