Main Ingredients

  • 1 whole whole turkey (12-14 pounds)
  • 1 cup unsalted butter, softened
  • 2 cups chicken broth

Seasoning

  • 4 tablespoons salt
  • 1 tablespoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 tablespoon dried thyme

Herbs for Stuffing

  • Fresh herbs (rosemary, sage, and thyme)

Preparation

  • Preheat your oven to 325°F (165°C). Remove the turkey neck and giblets, rinse it under cold water, and pat it dry with paper towels.
  • In a bowl, mix the softened butter with salt, pepper, garlic powder, onion powder, and dried thyme.
  • Carefully loosen the skin over the turkey breast with your fingers and rub half of the butter mixture under the skin. Spread the remaining butter all over the turkey exterior.
  • Stuff the turkey with fresh herbs.

Cooking

  • Place the turkey on a roasting rack in a large roasting pan. Pour the chicken broth into the bottom of the pan.
  • Roast the turkey in the preheated oven, estimating 13-15 minutes per pound. Baste the turkey with its juices every hour.
  • The turkey should reach an internal temperature of 165°F (75°C) in the thickest part of the breast. Let it rest for at least 30 minutes before carving.

Notes

Invest in a good meat thermometer. Brining the turkey overnight adds incredible depth of flavor. Store leftover turkey in an airtight container in the fridge for about 3-4 days.
