  • 1 large cucumber Because we all need some crunch!
  • 2 large ripe tomatoes Freshness is key!
  • 8 oz fresh mozzarella cheese The creamier, the better!
  • 1/4 cup fresh basil leaves Just enough to add that punch of flavor!
  • 2 tablespoons extra virgin olive oil Because everything’s better with olive oil.
  • 1 tablespoon balsamic vinegar A little sweet tang goes a long way.
  • to taste salt and pepper For that perfect seasoning.

Preparation

  • Start by washing your cucumber and tomatoes. Slice the cucumber into half-moons and chop the tomatoes into chunks.
  • Drain the mozzarella cubes and slice or tear them into bite-sized pieces.
  • Rinse the fresh basil leaves, and gently pat them dry. Tear them into smaller pieces.

Assembly

  • In a large mixing bowl, combine the sliced cucumber, chopped tomatoes, and mozzarella. Gently toss in the basil leaves.
  • Drizzle the extra virgin olive oil and balsamic vinegar over the salad, then sprinkle salt and pepper to taste. Toss gently to ensure everything is coated.

Chilling

  • Let your salad sit for about 10-15 minutes so the flavors can mingle before serving.

Notes

Use fresh ingredients for the best flavor. This salad can be prepared a few hours in advance, just hold off on adding the mozzarella until ready to serve.
